- Follow the Grain, in France and England. Multidisciplinary seminar course. Following the grain from the laboratories of wheat development to the fields from which they are grown, to the country elevators, to the shipping terminals where the grain is distributed around the world. Ending in a two week study visit to Paris, France and London, England where we met with industry personnel that consisted of millers, grain marketers, bakers, shippers, farmers, farm program researchers, and economists. May 2001.

Six week, intensive study of Modern Standard Arabic, regional history, cultural diversity from engaging in traditional Syrian cultural practices, and field trips to historical and cultural attractions.
